Saving graces – Super foods!

Scientists and health professionals are seeing a trend in the increase of disease and poor health in the U.S. Despite all our knowledge about health and nutrition, disease and disorder are affecting more and more people.

You may have even thought, “What’s going on? Why all of these diseases?” I, too, noticed the trend. Diseases that were once thought to occur in older people such as, colitis, Crohn’s disease, cancers, and multiple sclerosis are affecting the young adult population. Dr. Stephanie Seneff has enlightened us by shining a floodlight on the health of our nation (and globally also), bringing clarity and making absolute scientific sense of our observations that we as a nation are getting sicker by the minute.

She has mainly concentrated on the relationship between nutrition and health. To her credit, Dr. Seneff identified numerous health problems that increased after Genetically Modified Organisms (GMOs) were introduced into our food beginning with tomatoes then next all the squash, 1994.

The food we are buying and eating has Roundup in the genome of those substances. In fact, if we urinated on the grass it would probably die due to the amount of Roundup/glyphosate in our bodies!

The percentage of Americans with three or more chronic illnesses jumped from 7% to 13% in just 9 years; food allergies skyrocketed, and disorders such as autism, diabetes, reproductive disorders, digestive problems, and others are on the rise. Dr. Stephanie Seneff explains how glyphosate/Round up causes nutritional deficiencies leading to diseases such as autism, Alzheimer’s, Crohn’s, Parkinson’s, multiple sclerosis, muscle wasting, irritable bowel disease and leaky gut syndrome.

Most astounding are the research findings of the impact of the increased use of Roundup and the increase in the birth rate of individuals with autism. Her news-making pronouncement in February 2015 was that by 2025 1 in 2 childbirths would be an autistic child. Clearly, average citizens, not scientists had to be alarmed because the number didn’t sound like anything heard of before! And she was talking about 10 years away!

Glyphosate kills beneficial gut bacteria, thereby depleting aromatic amino acids. This leads to lowered serotonin availability. Serotonin deficiency is linked not only to autism, but also to obesity, Alzheimer’s disease, depression, and violent behavior, all of which are increasing in frequency today in step with increased glyphosate usage. I, as a child psychiatrist, choose to focus on Autism.

Autism’s effects aren’t limited to mental and social impairment. Physical symptoms include: disrupted gut bacteria and inflammatory bowel disorder; defective aromatase (CYP) enzyme; high serum nitrate and ammonia; impaired immune function; chronic low-grade inflammation in the brain and deficiencies in sulfate, methionine, serotonin, melatonin, zinc and iron. Glyphosate chelates (traps) zinc, manganese, iron, cobalt, and molybdenum, which lead directly to a deficiency in these essential nutrients and widespread health consequences. Glyphosate also disrupts important enzymes in the liver leading to an inability to detoxify other toxins and an inability to activate Vitamin D. Let’s Re-Think the War On Weeds As the war on weeds gears up for summer, I present another point of view about weeds, and I join Dr. Nancy Swanson in the question – “When did we decide that some plants are dangerous and invasive and others not? We use words like ‘threat’ and ‘invasive’ and ‘noxious’ to instill fear and justify using truly noxious means to kill these plants.” According to the expert Timothy Lee Scott, author of Invasive Plant Medicine, plants invade for a reason. “Many years ago, my wife imparted the idea in me”, “There is no such thing as a weed”, and from then on I’ve tried to follow the assertion of Ralph Waldo Emerson that a weed is “a plant whose virtues have not yet been discovered.” I totally agree with both Timothy Scott and Ralph Waldo Emerson. To their point, my examples are the abundantly available nutritious super foods that grow robustly from now until the late fall and beyond. These morsels are free, ever growing and replace all of the minerals and vitamins that glyphosate removes from the soil. They are delicious raw, cooked or in smoothies. The leaves I dry and because they are mineral rich, sprinkle the crushed leaves upon food as one would apply seasonings. The dried leaves can also be composted or returned directly to the soil to enrich it. Super food #1 – Purslane This amazing plant, which contains more than 20 times the melatonin found in any other fruit or vegetable and more omega-3 fatty acids than any other leafy vegetable plant, some 8.5 mg for every gram of weight. That amount rivals salmon! The fresh leaves contain surprisingly more omega-3 fatty acids. It is a rich source of dietary fiber. Purslane is also a rich source of an impressive number of vitamins and minerals.

Found in gardens throughout North America, young lambs quarters leaves are edible, watch for older leaves which have a white underside of minerals. Lambsquarters also has an impressive nutritional pedigree, including: calcium, folate, iron, lutein, lycopene, magnesium, manganese, potassium, selenium, Vitamin A, Vitamin B-6, Vitamin K, and zinc.
